A Downside of Gluten Free – New York Times

An article from the New York Time’s Nicholas Bakalar on how preliminary reports have shown Gluten Free diets may increase blood levels of arsenic and mercury.

In a study of 7471 participants 73 were on a Gluten free diet. Those 73 participants had nearly double the levels of urinary arsenic as those not on a gluten free diet.
